Vancil Sazon: Bringing Cuban Heritage to the Community

Jonathon Vancil, owner of Vancil Sazon, is honoring his family’s legacy by sharing the flavors of his Cuban heritage with his community.

Inspired by his grandfather Froilan “Cholan” Matos, who left Cuba for the United States and went on to open three successful restaurants in Los Angeles, Jonathon Vancil has taken the tradition of food, family, and community to the next level. Following in Cholan’s footsteps, Jonathon started a catering service that brought authentic Cuban cuisine to events and gatherings. However, he soon realized his dream went beyond catering alone. He envisioned a trailer-style food truck that would allow him to meet people where they are — at markets, festivals, and local events — while sharing the rich culinary traditions of his family with a new generation.

Overcoming Challenges


While Jonathon had a clear vision for Vancil Sazon, turning that vision into reality required overcoming a few obstacles. He approached the OCIE SBDC for assistance with refining his concept and preparing the necessary financial documents for lending.

Jonathon worked closely with SBDC consultant Jay Allis to develop accurate financial projections that would help him meet AmPac’s lending requirements. Beyond the financials, Jonathon also needed support in navigating the complex process of compliance, including obtaining DEH permits, business licensing, food safety certification, and establishing the appropriate business structure. The OCIE SBDC provided step-by-step guidance and interactive explanations that helped him understand the process and meet his tight deadlines.

A Bright Future Ahead


On September 30, 2024, Jonathan officially launched Vancil Sazon, complete with all the necessary permits and licenses for legal operation. With Jonathan’s  own personal investment alongside debt financing from AmPac, Vancil Sazon has created two new jobs and generated tens of thousands in sales, setting the stage for a promising future as both a caterer and mobile food facility.

Reflecting on his journey, Jonathon shared, “Working with Jay Allis and the OCIE SBDC has really made my life easier. From start to finish, I’ve never had a question go unanswered.”

Vancil Sazon: Bringing Cuban Heritage to the Community

Mike Daniel is the network director of the Orange County Inland Empire SBDC Network, which assists aspiring entrepreneurs and current business owners throughout Orange, San Bernardino and Riverside counties. Mike was formerly the director of the SBDC office at Long Beach City College. As business owner and entrepreneur himself, he started his career as the owner of a Rocky Mountain Chocolate Factory location in Manhattan Beach and went on to open a second location in Long Beach in 2001. In 2007, Mike sold the Manhattan Beach store for an above-market offer then invested in several additional locations as a minority shareholder. Mike further expanded his candy empire with venture located in Shoreline Village in Long Beach called Sugar Daddies Sweet Shoppe, based on fill-it yourself candy options.

Mike has a bachelor’s degree in Business Administration from California State University, Fullerton.
